Converting handwriting to machine text

I can't find any place in your Privacy Statement, where you mention where the actual data processing (of a handwritten text and convert it into machine text) takes place. 

1. If EU-serveres has been chosen in the setup, will the data be processed within the EU?
2. And if so, do you guarantee that the data is not transferred outside of the EU, according to the rules of the GDPR) ?

You information and documentation will be very much appreciated for a certain use case, where psychiatrists and likewise can take handwritten notes and later convert them to machinetext and insert it into a journal.
